Ingredients

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

2 cups diced potatoes (use a mix of red and yellow for color)

1 can (15 oz) baked beans

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 tbsp Worcestershire sauce

1 tsp paprika

1 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Beef: In a large skillet over medium heat, add the olive oil and sauté the chopped onion until translucent (about 4-5 minutes). Add the minced garlic and cook for an additional 1 minute.

Brown the Meat: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through; drain excess fat if necessary.

Combine Ingredients: Stir in the diced potatoes, baked beans, corn, Worcestershire sauce, paprika, oregano, salt, and pepper. Mix everything well to combine.

Layer in a Casserole Dish: Transfer the beef and vegetable mixture to a greased 9x13-inch casserole dish. Spread it out evenly.

Top with Cheese: Sprinkle the shredded cheddar cheese on top of the casserole.

Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.

Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
