1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

2 tbsp olive oil

2 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 cup beef broth

1 cup sour cream

2 tbsp all-purpose flour

Salt and pepper, to taste

8 oz (225g) egg noodles or your preferred pasta

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: Start by boiling a pot of salted water. Cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until softened.

      Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Add Mushrooms: Stir in the sliced mushrooms and cook for another 4-5 minutes until they are tender and their moisture has largely evaporated.

          Create the Sauce: In a small bowl, mix the flour with a few tablespoons of the beef broth to create a slurry. Pour this into the skillet along with the remaining broth, Worcestershire sauce, and Dijon mustard. Stir well and bring to a simmer.

            Finish with Sour Cream: Once the sauce thickens (about 3-4 minutes), lower the heat and stir in the sour cream. Mix until fully incorporated and creamy. Season with salt and pepper to taste.

              Combine with Noodles: Add the cooked egg noodles to the skillet with the stroganoff sauce, tossing to coat everything evenly. Allow it to heat through for an additional 2-3 minutes.
