1 lb ground pork (or chicken or turkey)

1 tablespoon sesame oil

2 cups coleslaw mix (cabbage and carrots)

1 cup shiitake or button mushrooms, sliced

2 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (or tamari for gluten-free)

2 teaspoons rice vinegar

1 tablespoon Sriracha (optional, for heat)

Salt and pepper to taste

Sesame seeds for garnish

Fresh cilantro for garnish

Instructions
 

Prepare the Ingredients: Chop the green onions, slice the mushrooms, and mince the garlic and ginger.

    Cook the Pork: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground pork, breaking it apart with a spatula, and cook until it’s browned and no longer pink (about 5-7 minutes).
