4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

½ cup sour cream

1 cup shredded sharp cheddar cheese

4 slices of cooked bacon, crumbled (optional)

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper to taste

Chives or green onions, finely chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic, cooking until the onion is soft and translucent.

    Cook the Potatoes: Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and let it simmer uncovered for about 15-20 minutes, or until the potatoes are fork-tender.

      Blend the Soup: Remove the pot from heat. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend just half of the soup and leave the rest as is.

        Add Creaminess: Stir in the heavy cream and sour cream. Heat the soup on low, stirring occasionally, until warmed through. Season with salt and pepper to taste.

          Cheesy Goodness: Stir in the shredded cheddar cheese, allowing it to melt into the soup. If desired, reserve a little cheese for garnish.

            Serve: Ladle the soup into bowls and top with crumbled bacon (if using), additional cheese, and chives or green onions for garnish.
