Thanksgiving Wild Rice

1 cup wild rice

2 cups vegetable broth

1 medium onion, diced

2 cloves garlic, minced

1 cup diced carrots

1 cup chopped celery

1 cup diced mushrooms (cremini or button)

1/2 cup dried cranberries

1/2 cup pecans, chopped

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried sage

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Rinse the wild rice under cold water and drain.

    In a medium pot, bring the vegetable broth to a boil. Add the rinsed wild rice, reduce the heat to low, cover, and simmer for about 45 minutes or until the rice is tender and has burst open. Remove from heat and let it sit covered for another 10 minutes.

      While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until translucent (about 5 minutes).

        Add the carrots, celery, and mushrooms to the skillet. Cook for another 8–10 minutes until the vegetables are softened.

          Stir in the dried cranberries and pecans. Season the mixture with thyme, sage, salt, and pepper, cooking for an additional 2-3 minutes until fragrant.

            Fluff the cooked wild rice with a fork and gently fold it into the vegetable mixture until well combined.

              Taste and adjust seasoning if necessary.

                Transfer the wild rice mixture into a serving dish and sprinkle with fresh parsley before serving.
