Ingredients
  

1 lb chicken breast, sliced into thin strips

1 cup coconut milk

1/2 cup creamy peanut butter

3 tbsp soy sauce

2 tbsp fresh lime juice

1 tbsp honey

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1/2 tsp red pepper flakes (adjust for spice)

1 bell pepper (red or yellow), sliced

1 cup snow peas or snap peas

2 green onions, sliced (for garnish)

Fresh cilantro (for garnish)

Cooked rice or quinoa (for serving)

Cooking oil (for frying)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the coconut milk, peanut butter, soy sauce, lime juice, honey, garlic, ginger, and red pepper flakes until smooth. Set aside.

    Marinate the Chicken: Place the sliced chicken in a large resealable plastic bag or a shallow dish. Pour half of the peanut sauce over the chicken, seal the bag (or cover the dish), and marinate in the refrigerator for at least 30 minutes for the best flavor.

      Cook the Chicken: Heat a tablespoon of cooking oil in a large skillet or wok over medium-high heat. Once hot, remove the chicken from the marinade (discard the marinade) and add it to the skillet. Cook the chicken for about 5-7 minutes, or until browned and cooked through.

        Sauté the Vegetables: Add the sliced bell pepper and snow peas to the skillet with the chicken. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

          Add Sauce: Pour the reserved peanut sauce over the cooked chicken and vegetables. Stir well to combine and heat through for another 2-3 minutes while the sauce thickens slightly.

            Serve: Remove from heat and serve over cooked rice or quinoa. Garnish with sliced green onions and fresh cilantro.
