1 lb chicken breast, cut into thin strips

2 tablespoons vegetable oil

1 tablespoon brown sugar

2 tablespoons soy sauce

1 tablespoon fish sauce

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon cumin

1 tablespoon lime juice

1 teaspoon turmeric

Skewers (wooden or metal)

For Peanut Sauce:

1/2 cup smooth peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon lime juice

1 tablespoon red chili paste (adjust for spiciness)

1/4 cup water (to adjust consistency)

Instructions
 

Marinate the Chicken: In a large bowl, mix vegetable oil, brown sugar, soy sauce, fish sauce, minced garlic, ground coriander, cumin, lime juice, and turmeric. Add the chicken strips, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

    Prepare Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Preheat your grill or grill pan over medium-high heat.

      Skewering: Thread the marinated chicken strips onto the skewers, leaving a little space between each piece for even cooking.

        Grill the Chicken: Place the skewers on the preheated grill. Cook for 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

          Make Peanut Sauce: In a saucepan over low heat, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and red chili paste. Stir until well blended and smooth, adding water to reach desired consistency.

            Serve: Remove the skewers from the grill and serve warm with the peanut sauce drizzled over or on the side for dipping. Garnish with chopped cilantro and lime wedges if desired.
