1 cup long-grain white rice

2 cups chicken broth (or vegetable broth for a vegetarian version)

1 tablespoon butter

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

½ teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon ground cumin

1 teaspoon dried parsley

Salt and pepper to taste

½ cup frozen peas (optional)

½ cup corn (optional)

Fresh cilantro or green onions for garnish

Instructions
 

Rinse the rice under cold water in a fine-mesh sieve until the water runs clear, then drain well.

    In a medium saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.

      Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add the rinsed rice to the saucepan, stirring to coat it in the butter and onion mixture. Cook for about 2-3 minutes, allowing the rice to toast lightly.

          Pour in the chicken or vegetable broth, then add the paprika, cayenne pepper, cumin, parsley, and season with salt and pepper to taste. Stir well to combine.

            Allow the mixture to come to a boil, then reduce the heat to low. Cover the saucepan with a lid and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

              If using, add the frozen peas and corn during the last 5 minutes of cooking to heat through.

                Once cooked, remove from heat and let the rice sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.

                  Garnish with fresh cilantro or sliced green onions for a burst of flavor and color.
