Ingredients

1 cup shredded pepper jack cheese

1/2 cup cream cheese, softened

1/3 cup diced jalapeños (fresh or pickled)

1/4 cup green onions, chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

Oil for frying

Optional: dipping sauce (ranch or southwestern dressing)

Instructions

In a mixing bowl, combine the shredded pepper jack cheese, cream cheese, diced jalapeños, chopped green onions, garlic powder, and onion powder. Mix well until all ingredients are evenly distributed.

Form the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper. Freeze for about 30 minutes to firm up the bites.

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

Remove each cheese ball from the freezer. Roll it in flour first, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure each bite is evenly coated for maximum crunch.

Heat a deep skillet or fryer with about 2 inches of oil over medium heat. Once the oil reaches 350°F (175°C), carefully add the breaded cheese balls in batches to avoid overcrowding.

Fry for about 3-4 minutes, or until they are golden brown and crispy on all sides. Use a slotted spoon to remove them from the oil and drain on paper towels.

Serve hot with your choice of dipping sauce, and enjoy your homemade Texas Roadhouse Rattlesnake Bites!
