2 boneless, skinless chicken breasts

1 cup teriyaki sauce (store-bought or homemade)

1 cup uncooked brown rice

2 cups Brussels sprouts, halved

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 green onions, chopped

1 sesame seeds, for garnish

Marinate the Chicken: Place the chicken breasts in a bowl or a resealable bag. Pour half of the teriyaki sauce over the chicken, ensuring it's evenly coated. Let it marinate in the refrigerator for at least 30 minutes.

    Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice and a pinch of salt. Reduce heat to low, cover, and simmer for 30-40 minutes until the rice is tender and has absorbed all the water. Fluff with a fork and set aside.

      Roast Brussels Sprouts: Preheat your oven to 425°F (220°C). On a baking sheet, toss the halved Brussels sprouts with olive oil, garlic powder, onion powder, salt, and pepper. Spread them out in a single layer and roast for 20-25 minutes, turning halfway through, until crispy and caramelized.

        Cook the Chicken: In a skillet over medium heat, cook the marinated chicken breasts for 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Remove from the pan and let rest for a few minutes before slicing.

          Assemble the Bowl: In each serving bowl, place a scoop of brown rice as the base. Top with slices of teriyaki chicken and crispy Brussels sprouts. Drizzle the remaining teriyaki sauce over the top.
