2 cups frozen tater tots

4 large eggs

1 cup cooked breakfast sausage, crumbled

1 cup shredded cheddar cheese

1/2 cup diced tomatoes

1/2 avocado, sliced

1/4 cup green onions, sliced

Salt and pepper to taste

1 tablespoon olive oil

2 tablespoons sour cream (optional)

Hot sauce (optional)

Preheat the oven to 400°F (200°C). Spread the frozen tater tots on a baking sheet in a single layer. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through for even cooking.

    While the tater tots are baking, heat a non-stick skillet over medium heat and drizzle with olive oil.

      Crack the eggs into the skillet, season with salt and pepper, and cook to your desired level of doneness (scrambled, sunny side up, or over easy). For scrambling, stir gently until fully cooked and fluffy.

        Once the tater tots are done, remove them from the oven and let cool for a couple minutes.

          In a large bowl, layer the crispy tater tots as the base. Top with the crumbled breakfast sausage, cooked eggs, and shredded cheddar cheese.

            Add the diced tomatoes, avocado slices, and sprinkle the green onions over the top.

              Finish with a dollop of sour cream and a drizzle of hot sauce if desired.
