12-15 fresh strawberries (or other fruit like grapes or mandarin segments)

1 cup granulated sugar

1/2 cup water

1 tablespoon lemon juice

1/4 cup corn syrup (optional for extra shine and chewiness)

Wooden skewers or toothpicks

Instructions
 

Prep the Fruit: Wash and dry the strawberries thoroughly, as moisture can affect the candy coating. If using other fruits, make sure they are similarly clean and dry. Skewer the fruits onto wooden skewers or toothpicks, about 3-4 pieces per skewer. Set aside.

    Make the Sugar Syrup: In a medium saucepan, combine the granulated sugar, water, lemon juice, and corn syrup (if using). Cook over medium heat, stirring constantly until the sugar dissolves.

      Boil: Once the sugar has dissolved, stop stirring and allow the mixture to boil. Use a candy thermometer and monitor the temperature until it reaches 300°F (150°C) - the hard crack stage.

        Coat the Fruit: Once the syrup reaches the correct temperature, quickly remove it from the heat. Working quickly, dip each skewer of fruit into the syrup, allowing the excess syrup to drip off before placing it on a parchment paper-lined baking sheet. Ensure the fruit is well-coated but be cautious since the syrup can be very hot.

          Cool Down: Allow the coated fruit to sit at room temperature for about 15-20 minutes, or until the candy coating hardens completely.

            Serve: Enjoy your Tanghulu immediately for the best texture. They can be stored at room temperature in an airtight container, but they’re best eaten fresh.
