12 oz cheese tortellini (fresh or frozen)

1 lb ground beef or turkey

1 small yellow onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes with green chilies

1 cup beef broth or vegetable broth

1 packet taco seasoning

1 cup corn kernels (canned or frozen)

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream and avocado (for serving, optional)

Instructions
 

In a large pot, brown the ground beef (or turkey) over medium heat. Break it up with a spatula as it cooks until it's no longer pink. Drain any excess fat if necessary.

    Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

      Stir in the taco seasoning and diced tomatoes with their juices, mixing well to combine.

        Pour in the beef broth and bring the mixture to a simmer.
