1 lb ground beef (or turkey)

1 packet taco seasoning

1 cup black beans, drained and rinsed

1 cup corn, canned or frozen

1 cup shredded cheddar cheese

1 cup salsa

1 large egg

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 cup milk

1/4 cup vegetable oil

1/4 cup chopped fresh cilantro (optional for garnish)

Sour cream and diced tomatoes for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or grease it lightly.

    Cook the Meat: In a skillet over medium heat, cook the ground beef (or turkey) until browned. Drain excess fat, then add the taco seasoning with 1/4 cup of water. Stir until well combined. Cook for an additional 5 minutes until thickened.

      Mix the Filling: In a bowl, combine the cooked meat mixture, black beans, corn, and half of the shredded cheddar cheese. Then, gently fold in the salsa.

        Prepare the Batter: In a separate bowl, whisk together the egg, milk, and vegetable oil until fully combined. In another bowl, blend the flour, baking powder, and salt. Gradually add the dry ingredients into the wet mixture, stirring until smooth.

          Fill the Muffin Tin: Pour a tablespoon of batter into each muffin cup to form a base, then spoon a generous amount of the taco filling on top, followed by another tablespoon of batter to cover.

            Add Cheese: Sprinkle the remaining cheddar cheese evenly over the top of each taco cupcake.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

                Cool and Serve: Remove from the oven and let the taco cupcakes cool for a few minutes before transferring them to a wire rack. Serve warm with sour cream and diced tomatoes on top for garnish.
