Ingredients
  

1 pound ground beef or turkey

1 small onion, diced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (about 1 oz)

1 cup salsa

2 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup sour cream

1 avocado, sliced

Fresh cilantro, for garnish

Salt and pepper to taste

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet over medium heat, cook the ground beef or turkey until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.

      Add the diced onion and red bell pepper to the skillet. Sauté for about 5 minutes or until the vegetables are softened.

        Stir in the black beans, corn, diced tomatoes, taco seasoning, and salsa. Mix well, and let it simmer for about 5-7 minutes. Season with salt and pepper to taste.

          In a greased 9x13-inch baking dish, evenly spread half of the crushed tortilla chips on the bottom.

            Layer the beef mixture over the chips, followed by half of the shredded cheddar cheese.

              Add the remaining crushed chips over the cheese layer, followed by the remaining beef mixture. Top everything with the rest of the cheddar cheese.

                Bake in the preheated oven for about 20-25 minutes, until the cheese is melted and bubbly.

                  Remove from the oven and let it cool for a few minutes.

                    Serve the casserole topped with dollops of sour cream, avocado slices, and fresh cilantro for garnish.
