4 boneless, skinless chicken breasts

6 slices Swiss cheese

1 cup mushrooms, sliced

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with olive oil.

    In a medium bowl, combine cream cheese, grated Parmesan, garlic powder, onion powder, thyme, salt, and pepper. Mix until smooth and well combined.

      Pat the chicken breasts dry with a paper towel, then season each side with salt and pepper.

        Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 4-5 minutes, or until they are golden brown and tender.

          Add the chopped spinach to the skillet with the mushrooms and cook until the spinach wilts, about 2 minutes. Remove from heat and let cool slightly.

            Spread a generous layer of the cream cheese mixture over each chicken breast, then top with the sautéed mushrooms and spinach.

              Place 1-2 slices of Swiss cheese on top of each chicken breast.

                Arrange the chicken breasts in the prepared baking dish.

                  Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

                    Once finished, remove from the oven and let it rest for a few minutes before serving.

                      Garnish with chopped fresh parsley before serving.
