Ingredients

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

3/4 cup milk

1 cup dark brown sugar (for sauce)

1 cup heavy cream

1/2 cup water

1 tsp vanilla extract (for sauce)

Pinch of sea salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or pudding bowl with butter and set aside.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy using an electric mixer (about 3-5 minutes).

Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract until well combined.

Mix in Dry Ingredients and Milk: Gradually fold the dry ingredients into the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.

Transfer to Baking Dish: Pour the batter into the prepared baking dish, smoothing the top with a spatula.

Prepare the Toffee Sauce: In a saucepan over medium heat, combine the dark brown sugar, heavy cream, water, vanilla extract, and a pinch of sea salt. Stir constantly until the mixture is well blended and begins to simmer. Remove from heat.

Pour Sauce Over Batter: Slowly pour the toffee sauce over the pudding batter in the baking dish—do not mix! The sauce will sink and create a delicious toffee layer as it bakes.

Bake: Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the pudding to cool slightly before serving. Serve warm with additional toffee sauce drizzled over the top and a scoop of vanilla ice cream or whipped cream.

                      Prep Time: 15 mins | Total Time: 50 mins | Servings: 6-8

                        - Presentation Tips: Serve in individual ramekins for a charming touch, topped with a sprinkle of sea salt and a sprig of mint for added freshness.
