2 lbs chicken wings

1/2 cup maple syrup

2-3 fresh jalapeños, thinly sliced (adjust to taste)

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 tablespoon sriracha (optional for extra heat)

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground black pepper

1/2 teaspoon salt

1 tablespoon olive oil (for greasing)

Chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Marinade: In a large bowl, whisk together maple syrup, soy sauce, apple cider vinegar, sriracha (if using), minced garlic, smoked paprika, ground black pepper, and salt until thoroughly combined.

    Marinate the Wings: Add the chicken wings to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap or transfer wings to a resealable bag. Refrigerate for at least 2 hours, or overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top for even cooking. Lightly grease the rack with olive oil.

        Arrange the Wings: Remove the wings from the marinade (reserve the marinade for later) and arrange them in a single layer on the prepared rack.

          Bake the Wings: Bake in the preheated oven for 25-30 minutes, or until the wings are crispy and golden brown. Flip the wings halfway through cooking to ensure even baking.

            Prepare the Glaze: While the wings are baking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for 5-7 minutes, allowing it to thicken slightly.

              Glaze the Wings: After 25-30 minutes, remove the wings from the oven and brush them generously with the thickened marinade. Return to the oven for an additional 5 minutes to caramelize the glaze.

                Add Jalapeños: In the last few minutes of baking, scatter the sliced jalapeños over the wings to let them heat but maintain some crunch.

                  Serve: Once done, remove the wings from the oven and let them rest for a couple of minutes. Garnish with chopped green onions and sesame seeds before serving.
