Ingredients
  

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned, drained)

1 red bell pepper, diced

1 green bell pepper, diced

1 onion, chopped

2 cloves garlic, minced

1/4 cup soy sauce

1/4 cup apple cider vinegar

1/3 cup brown sugar

1 tablespoon ketchup

1 tablespoon cornstarch

1 tablespoon water

2 tablespoons vegetable oil

Salt and pepper to taste

Cooked rice, for serving

Instructions
 

In a bowl, combine soy sauce, apple cider vinegar, brown sugar, ketchup, minced garlic, salt, and pepper. Mix until sugar is dissolved to create the sweet and sour sauce.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, add the remaining tablespoon of oil and stir-fry the chopped onion and diced bell peppers for about 3-4 minutes until tender.

        Add the cooked chicken back to the skillet along with the pineapple chunks. Pour the sweet and sour sauce over the mixture, stirring to coat all the ingredients.

          Mix cornstarch with water in a small bowl until smooth, then slowly add it to the skillet. Stir continuously until the sauce thickens, about 2-3 minutes.

            Taste and adjust seasoning if necessary. Cook for another minute until everything is heated through.

              Serve the sweet and sour chicken over cooked rice, garnishing with chopped green onions if desired.
