4 medium sweet potatoes

1/2 cup brown sugar

1/4 cup unsalted butter, melted

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 cup pecans, chopped

1/2 cup rolled oats

1/4 cup all-purpose flour

1/4 cup maple syrup

1/2 teaspoon vanilla extract

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash and pierce each sweet potato several times with a fork. Place them on a baking sheet and roast in the preheated oven for 45-60 minutes, or until tender when poked with a fork.

      While the sweet potatoes are roasting, prepare the pecan streusel topping. In a mixing bowl, combine the chopped pecans, rolled oats, all-purpose flour, brown sugar, cinnamon, nutmeg, and salt. Mix well.

        Pour in the melted butter and maple syrup, then add the vanilla extract. Stir until the mixture resembles coarse crumbs.

          Once the sweet potatoes are done, remove them from the oven and let cool slightly. Cut each potato lengthwise and gently mash the insides with a fork, leaving the skins intact.

            Evenly distribute the pecan streusel topping over each sweet potato.

              Return the sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the topping is golden brown and crisp.

                Remove from the oven and allow to cool for a few minutes before serving.
