2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

1 cup brown sugar

1/2 cup unsweetened coconut milk (or use regular milk)

3 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/4 tsp salt

1 unbaked pie crust (store-bought or homemade)

1/4 cup melted butter

Instructions
 

Preheat your oven to 350°F (175°C).

    If you haven't already, peel and dice the sweet potatoes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and let cool.

      In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, coconut milk, eggs, vanilla extract, melted butter, cinnamon, nutmeg, ginger, and salt. Use an electric mixer or a whisk to blend until smooth and creamy.

        Pour the sweet potato mixture into the unbaked pie crust, spreading it evenly.

          Bake in the preheated oven for 45-50 minutes, or until the pie is set and a toothpick inserted in the center comes out clean.

            Allow the pie to cool at room temperature for about 1 hour, then refrigerate for at least 2 hours before serving to allow the flavors to meld.

              Slice and serve chilled or at room temperature. Optional: top with whipped cream or a sprinkle of cinnamon before serving.
