4 medium sweet potatoes, peeled and diced

1/4 cup unsalted butter, melted

1/2 cup brown sugar

1/4 cup milk (whole or almond)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 cups mini marshmallows

1/2 cup chopped pecans (optional)

1/4 cup shredded coconut (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Sweet Potatoes: In a large pot, bring water to a boil. Add the diced sweet potatoes and boil for 15-20 minutes, or until tender. Drain and let cool slightly.

      Mash Sweet Potatoes: In a large mixing bowl, combine the cooked sweet potatoes with melted butter, brown sugar, milk, vanilla extract, cinnamon, nutmeg, and salt. Mash everything together until smooth and creamy.

        Transfer to Baking Dish: Pour the sweet potato mixture into a greased 9x13 inch baking dish, smoothing the top with a spatula.

          Add Toppings: Sprinkle the mini marshmallows evenly over the top of the sweet potato mixture. If using, add chopped pecans and shredded coconut for extra texture and flavor.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and puffy.

              Cool and Serve: Remove from the oven and allow it to cool for a few minutes before serving. This casserole is best enjoyed warm.
