1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

1/2 cup carrots, sliced thin

2 cloves garlic, minced

1 inch ginger, grated

1/4 cup cornstarch

2 tablespoons vegetable oil

1/4 cup apple cider vinegar

1/4 cup honey

1/4 cup ketchup

2 tablespoons soy sauce (or tamari for gluten-free)

Salt and pepper to taste

Prep the Chicken: Start by seasoning the chicken pieces with salt and pepper. Place the cornstarch in a bowl and coat the chicken pieces evenly; this will give them a crispy exterior when cooked.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and sauté until golden brown and cooked through, about 5-7 minutes. Remove and set aside.

      Sauté the Vegetables: In the same skillet, add another tablespoon of oil. Sauté the chopped onion, carrots, and bell peppers until they start to soften, about 3-4 minutes. Add the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

        Make the Sauce: In a small bowl, whisk together the apple cider vinegar, honey, ketchup, and soy sauce. Pour the sauce mixture into the skillet with the vegetables, bringing it to a simmer.

          Combine Everything: Return the cooked chicken to the skillet, along with the pineapple chunks. Stir gently to coat the chicken and vegetables in the sauce, simmering for another 3-5 minutes to allow the flavors to meld.

            Adjust Consistency: If you prefer a thicker sauce, you can dissolve a teaspoon of cornstarch in a tablespoon of water and stir it into the sauce, letting it thicken for a minute.
