1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup bell peppers (red and yellow), diced

1 cup pineapple chunks (fresh or canned)

1/2 cup onion, diced

2 cloves garlic, minced

1/4 cup ketchup

1/4 cup apple cider vinegar

1/4 cup honey

1 tablespoon soy sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

Salt and pepper to taste

Sesame seeds (for garnish)

Green onions, sliced (for garnish)

Instructions
 

In a large bowl, mix the chicken pieces with salt and pepper. Set aside.

    In a small bowl, combine the ketchup, apple cider vinegar, honey, soy sauce, and cornstarch. Whisk together until smooth and set aside.

      Heat vegetable oil in a large skillet or wok over medium-high heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 5-7 minutes, stirring frequently.

        Add the minced garlic and diced onions to the skillet. Sauté for an additional 2-3 minutes until the onion becomes translucent.

          Stir in the diced bell peppers and pineapple chunks. Cook for another 3-4 minutes until the peppers start to soften.

            Pour the sauce mixture over the chicken and vegetables. Stir well to combine and cook for 2-3 minutes until the sauce thickens and coats the ingredients.

              Taste and adjust seasoning if necessary. Remove from heat.

                Transfer the Sweet and Sour Chicken to a serving dish and sprinkle with sesame seeds and sliced green onions for garnish.
