Ingredients

1 pound ground beef

1/2 pound ground pork

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

6 cups beef broth

2 cups diced potatoes

1 cup carrots, sliced

1 cup frozen peas

1 tablespoon olive oil

1/2 cup heavy cream

Fresh dill for garnish

Instructions

Prepare the Meatballs: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, and salt and pepper. Mix until just combined, being careful not to overwork the mixture. Form into small meatballs, about 1 inch in diameter.

Cook the Meatballs: In a large pot, heat the olive oil over medium heat. Add the meatballs in batches and brown on all sides for about 5-7 minutes. Remove the meatballs and set aside.

Sauté the Vegetables: In the same pot, add the diced potatoes and carrots, stirring until they start to soften, about 5 minutes. Pour in the beef broth and bring to a boil.

Combine and Simmer: Once boiling, reduce to a simmer and return the browned meatballs to the pot. Cover and cook for 10-15 minutes, or until the vegetables are tender.

Add the Peas and Cream: Stir in the frozen peas and heavy cream, cooking for an additional 5 minutes. Adjust seasoning with salt and pepper to taste.

Serve: Ladle the soup into bowls and garnish with fresh dill.
