Ingredients
  

1 cup orzo pasta

1 cup sundried tomatoes, packed in oil, drained and chopped

8 oz Boursin cheese (garlic & fine herbs flavor)

1 cup vegetable broth

1 cup heavy cream

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium pot, bring salted water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.

      In a large oven-safe skillet or casserole dish, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

        Stir in the sundried tomatoes and cook for another 2 minutes.

          Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.

            Reduce the heat to low and add the heavy cream, vegetable broth, Boursin cheese, dried basil, salt, and black pepper. Stir until the cheese is melted and the mixture is smooth and creamy.

              Fold in the cooked orzo and halved cherry tomatoes, mixing until everything is evenly combined.

                Sprinkle the grated Parmesan cheese on top and transfer the skillet to the preheated oven.

                  Bake for 20-25 minutes, or until the top is golden and bubbly.

                    Remove from the oven and let sit for a few minutes. Garnish with fresh basil leaves before serving.
