Ingredients
  

1 cup sun-dried tomatoes (packed in oil, drained)

2 cloves garlic, minced

1/4 cup pine nuts, toasted

1/2 cup fresh basil leaves

1/2 cup grated Parmesan cheese

1/4 cup olive oil

Salt and pepper to taste

12 ounces pasta (spaghetti or penne)

Fresh basil leaves for garnish

Extra Parmesan cheese for serving

Instructions
 

Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

    In a food processor, combine the sun-dried tomatoes, minced garlic, toasted pine nuts, fresh basil, and grated Parmesan cheese. Pulse until the mixture becomes a coarse paste.

      With the food processor running, slowly pour in the olive oil until the pesto reaches your desired consistency. If it's too thick, add a little reserved pasta water until smooth.

        Season the pesto with salt and pepper to taste.

          In a large mixing bowl, combine the cooked pasta and the sun-dried tomato pesto. Toss well to coat the pasta evenly with the pesto. If desired, add more reserved pasta water for creaminess.

            Serve the pasta hot, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese.
