12 oz cheese tortellini

1 cup sun dried tomatoes in oil, chopped

1 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1/2 cup fresh mozzarella balls, halved

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

3 tablespoons balsamic vinegar

3 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Parmesan cheese, for garnish (optional)

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, garlic powder, salt, and pepper until well combined. Set aside.

      Mix the Ingredients: In a large mixing bowl, combine the cooked tortellini, sun dried tomatoes, cherry tomatoes, black olives, mozzarella balls, red onion, and fresh basil.

        Dress the Salad: Pour the dressing over the tortellini mixture and gently toss to combine, ensuring all ingredients are well coated.

          Chill: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

            Serve: Before serving, give the salad a gentle toss. If desired, sprinkle with grated Parmesan cheese for an added touch of flavor.
