2 ribeye steaks (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Preparation of Steaks: Take the steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt and pepper.

    Cook the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare (adjust time for desired doneness). Use a meat thermometer to check the internal temperature if necessary (130°F for medium-rare).

      Rest the Steaks: Remove the steaks from the skillet and let them rest on a plate, covered with foil to keep warm.

        Make the Garlic Cream Sauce: In the same skillet (do not wipe it clean), reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

          Add Cream and Seasoning: Pour in the heavy cream, stirring to scrape up any browned bits from the skillet. Add the Dijon mustard, Worcestershire sauce, and thyme. Mix well.

            Thicken the Sauce: Allow the sauce to simmer for about 3-5 minutes until it thickens slightly. Stir in the Parmesan cheese until melted and fully incorporated. Season with salt and pepper to taste.

              Serve: Slice the rested steaks and plate them. Drizzle the luscious garlic cream sauce over the top and garnish with chopped fresh parsley for a pop of color.
