4 sole fillets

1 cup scallops, chopped

1 cup fresh crabmeat, shell pieces removed

1/2 cup breadcrumbs

2 tablespoons butter

1/4 cup shallots, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 lemon, zested and juiced

Salt and pepper to taste

1 teaspoon paprika

Olive oil for drizzling

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, melt the butter over medium heat. Add the shallots and garlic, sautéing until soft and fragrant, about 2–3 minutes.

      Stir in the chopped scallops and cook until they are opaque, about 3–4 minutes. Remove from heat and let cool slightly.

        In a mixing bowl, combine the scallop mixture with crabmeat, breadcrumbs, lemon zest, lemon juice, parsley, paprika, salt, and pepper. Mix well until everything is combined.

          Lay the sole fillets flat on a clean surface. Spoon an equal amount of the stuffing onto the center of each fillet.

            Carefully fold each fillet over the stuffing, pinching the edges to seal. If necessary, use toothpicks to hold the rolls together.

              Place the stuffed sole in a greased baking dish and drizzle with a little olive oil.

                Bake in the preheated oven for 20-25 minutes, or until the sole is cooked through and flaky.

                  Remove from the oven and let it rest for a few minutes before serving.
