2 large salmon fillets (skinless, boneless)

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 clove garlic, minced

1 tablespoon lemon juice

1 teaspoon dried dill

Salt and pepper to taste

2 tablespoons olive oil

Zest of 1 lemon

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.

    In a mixing bowl, combine the chopped spinach, ricotta cheese, minced garlic, lemon juice, dried dill, and lemon zest. Mix well and season with salt and pepper to taste.

      Place the salmon fillets on a cutting board, skin-side down. Gently pound them with a meat mallet or rolling pin to flatten them a bit and make them easier to roll.

        Spread an even layer of the spinach and ricotta mixture over each salmon fillet, leaving about a half-inch border on the edges.

          Starting at one end, carefully roll the salmon fillets tightly to form pinwheels. Secure each roll with kitchen twine or toothpicks.

            In a skillet, heat olive oil over medium heat. Once the oil is hot, sear the pinwheels for 2-3 minutes on each side until golden brown.

              Transfer the seared pinwheels to the prepared baking dish. Bake in the preheated oven for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Remove from the oven and let rest for a few minutes before removing the twine or toothpicks.
