Ingredients
  

4 salmon fillets (about 6 oz each)

4 oz cream cheese, softened

1/2 cup fresh spinach, chopped

1/4 cup sun-dried tomatoes, finely chopped

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

2 cloves garlic, minced

Salt and pepper to taste

Olive oil, for drizzling

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium-sized bowl, combine the softened cream cheese, chopped spinach, sun-dried tomatoes, dill, lemon juice, and minced garlic. Mix until well combined. Season with salt and pepper to taste.

      Place the salmon fillets skin-side down on a clean cutting board. Using a sharp knife, slice a pocket into each fillet, making sure not to cut all the way through.

        Generously stuff each salmon pocket with the cream cheese mixture, pressing gently to ensure it fills the cavity.

          Place the stuffed fillets in a greased baking dish. Drizzle with olive oil and season lightly with salt and pepper.

            Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

              For an extra touch, broil the salmon for an additional 2-3 minutes at the end to achieve a golden top.
