1 ½ pounds flank steak

1 cup fresh spinach, chopped

½ cup ricotta cheese

½ cup sun-dried tomatoes, finely chopped

½ cup feta cheese, crumbled

1 clove garlic, minced

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Instructions
 

Preheat your oven to 375°F (190°C).

    Place the flank steak on a clean cutting board. Using a sharp knife, carefully slice the steak horizontally to create a pocket, being sure not to cut through entirely.

      In a mixing bowl, combine the chopped spinach, ricotta cheese, sun-dried tomatoes, feta cheese, minced garlic, balsamic vinegar, oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

        Stuff the mixture into the pocket of the flank steak, spreading it evenly.

          Using kitchen twine or toothpicks, securely close the pocket of the stuffed flank steak to ensure the filling stays inside during cooking.

            In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, carefully place the stuffed flank steak in the skillet. Sear the steak for 3-4 minutes on each side until browned.

              Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the steak reaches your desired level of doneness (135°F for medium-rare).

                Remove the skillet from the oven and let the steak rest for 10 minutes before slicing.

                  Carefully remove the twine or toothpicks, then slice the steak against the grain into thick slices.
