1 lb chicken breast, diced

2 cups cooked jasmine rice

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1/2 cup red onion, diced

1/4 cup fresh cilantro, chopped

2 avocados, diced

1 lime, juiced

1 teaspoon chili powder

1 teaspoon cumin

1 tablespoon olive oil

Salt and pepper, to taste

1/2 cup cotija cheese (or feta cheese for a twist)

Optional: Hot sauce for drizzling

Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breast. Season with chili powder, cumin, salt, and pepper. Cook for about 6-8 minutes or until the chicken is cooked through and golden brown. Remove from the skillet and set aside.

    Cook the Corn: In the same skillet, add the corn, diced red onion, and bell pepper. Sauté for 3-5 minutes until the vegetables are tender and the corn is slightly charred. Remove from heat and stir in chopped cilantro and the juice of half a lime.
