2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar

1/2 cup water

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

In a medium saucepan, combine the sliced strawberries, sugar, and water. Stir to combine and let the mixture sit for about 10-15 minutes to allow the strawberries to release their juices.

    Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to dissolve the sugar.

      Once boiling, reduce the heat to low and simmer for about 10-15 minutes, or until the strawberries are soft and the syrup has thickened slightly.

        Remove the saucepan from the heat and stir in the lemon juice, vanilla extract, and a pinch of salt. This will enhance the flavor and balance the sweetness.

          Allow the syrup to cool slightly before straining it through a fine-mesh sieve into a clean jar or bowl, pressing gently on the solids to extract as much liquid as possible.
