For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

For the cheesecake filling:

16 oz (450g) cream cheese, softened

1 cup sour cream

¾ cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

For the strawberry swirl:

2 cups fresh strawberries, halved

¼ cup sugar

1 tablespoon lemon juice

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let it cool.

      Make the Strawberry Swirl: In a small saucepan, combine the halved strawberries, sugar, and lemon juice. Cook over medium heat for about 5-7 minutes until the strawberries have softened. Use a fork or potato masher to lightly mash the strawberries, creating a chunky sauce. Remove from heat and let it cool.

        Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer. Add the sour cream, granulated sugar, eggs, and vanilla extract. Mix until completely blended and creamy.

          Combine and Swirl: Pour half of the cheesecake mixture into the cooled crust. Drizzle some of the strawberry sauce over it and use a knife or toothpick to gently swirl it into the batter. Pour the remaining cheesecake mixture on top, then add more strawberry sauce on top, swirling again to create a marbled effect.

            Bake the Cheesecake: Place the springform pan on a baking sheet and bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly.

              Cool and Chill: Turn off the oven and crack open the oven door. Let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours, or preferably overnight, until completely chilled and set.

                Serve: Carefully remove the sides of the springform pan. Slice the cheesecake and serve chilled, garnished with extra fresh strawberries and a drizzle of the remaining strawberry sauce if desired.
