4 large eggs

1 cup granulated sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

2 cups fresh strawberries, hulled and sliced

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 15x10-inch jelly roll pan with parchment paper.

    Prepare the Cake Batter: In a large bowl, beat the eggs and granulated sugar with an electric mixer on high speed for about 5 minutes, or until light and fluffy. Mix in vanilla extract.

      Combine the Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry mixture into the egg mixture until just combined.

        Bake the Cake: Pour the batter into the prepared jelly roll pan, spreading it evenly. Bake for 12-15 minutes or until the cake springs back when lightly touched.

          Roll the Cake: Once baked, immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper and roll the cake up in the towel, starting from the shorter end. Let it cool completely.

            Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth. Add vanilla extract. In another bowl, whip the heavy cream to soft peaks, then gently fold it into the cream cheese mixture until well combined.

              Prepare the Strawberries: In a medium bowl, mix the sliced strawberries with granulated sugar and lemon juice. Allow them to sit for about 10-15 minutes to release their juices.

                Assemble the Roll: Unroll the cooled cake and spread the cheesecake filling evenly over the surface. Spoon some of the strawberry mixture (with juices) over the cheesecake filling.

                  Roll it Up: Carefully roll the cake back up without the towel, creating a tight roll. Wrap the roll in plastic wrap and refrigerate for at least 1 hour to set.
