2 cups fresh strawberries, hulled and sliced

3/4 cup granulated sugar, divided

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

1 (8 oz) package cream cheese, softened

1 (8 oz) tub whipped topping (like Cool Whip)

1 pre-made graham cracker pie crust

1/4 cup sliced almonds (optional, for garnish)

Fresh mint leaves (optional, for garnish)

Prepare the Strawberries: In a bowl, combine sliced strawberries with 1/4 cup of the granulated sugar and lemon juice. Toss well to coat and set aside to macerate for about 15-20 minutes. This will help release the strawberry juices.

    Make the Cream Cheese Filling: In a large mixing bowl, beat the softened cream cheese with the remaining 1/2 cup granulated sugar and vanilla extract until smooth and creamy.
