2 cups fresh strawberries, hulled and halved

1 cup plain Greek yogurt

1/2 cup honey or maple syrup

1 tablespoon lemon juice

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

Place the halved strawberries in a bowl and sprinkle with a tablespoon of honey. Let them sit for about 10 minutes to release their juices.

    In a blender, combine the macerated strawberries, Greek yogurt, remaining honey (or maple syrup), lemon juice, vanilla extract, and salt. Blend until smooth and creamy.

      Taste the mixture and adjust sweetness if needed. Some strawberries may need a bit more honey depending on their ripeness.

        Pour the strawberry yogurt mixture into a shallow dish or ice cream maker. If you’re using a dish, freeze for about 1.5 to 2 hours, stirring every 30 minutes to break up ice crystals until it reaches your desired consistency.

          If using an ice cream maker, churn according to the manufacturer’s instructions until it’s soft-serve texture. Then transfer to a container and freeze for at least 2 hours until firm.

            Once ready to serve, let the yogurt sit at room temperature for a few minutes for easier scooping.
