1 cup crushed graham crackers

1/4 cup powdered sugar

1/4 cup unsalted butter, melted

1/2 teaspoon vanilla extract

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

For the Strawberry Crunch Topping:

1 cup freeze-dried strawberries, crushed

1/2 cup strawberry shortcake cookies, crushed

1 tbsp granulated sugar

Additional Ingredients:

Fresh strawberries, sliced (for garnish)

Whipped cream (optional, for serving)

Instructions
 

Prepare Taco Shells:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine crushed graham crackers, powdered sugar, melted butter, and vanilla extract. Mix until well combined.

        - Using a taco mold or a muffin tin, press the graham cracker mixture firmly into the shape of taco shells (approximately 10 taco shells).

          - Bake in the preheated oven for 10-12 minutes or until lightly golden and set. Remove from the oven and allow to cool completely.

            Make the Cheesecake Filling:

              - In a large bowl, mix the softened cream cheese and granulated sugar using an electric mixer until smooth and creamy.

                - Add the vanilla extract and mix until incorporated.

                  - In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and combined.

                    Prepare Strawberry Crunch Topping:

                      - In a small bowl, combine crushed freeze-dried strawberries, crushed strawberry shortcake cookies, and granulated sugar. Mix well and set aside.

                        Assemble Tacos:

                          - Take the cooled taco shells and fill each one with a generous amount of the cheesecake filling using a piping bag or a spoon.

                            - Sprinkle the strawberry crunch topping over the filled tacos, ensuring they are well coated.
