1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

1 cup heavy whipping cream

1 cup mascarpone cheese

⅓ cup powdered sugar

1 teaspoon vanilla extract

2 cups fresh strawberries, hulled and sliced

2 tablespoons lemon juice

1 tablespoon gelatin

3 tablespoons cold water

Fresh mint leaves for garnish (optional)

Prepare the Crust: Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture evenly into the bottom of a 9-inch pie dish. Bake for 8-10 minutes until golden, then let it cool completely.

    Make the Gelatin Mixture: In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom. Then, gently heat it in the microwave for about 10 seconds until it dissolves. Set aside to cool slightly.

      Whip the Cream: In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

        Combine and Incorporate: In another bowl, fold together mascarpone cheese and lemon juice until smooth. Then, gently fold in the whipped cream until fully incorporated.

          Combine Gelatin and Strawberries: Slowly pour the dissolved gelatin into the mascarpone-cream mixture while carefully folding it in. Add the sliced strawberries and gently mix to avoid breaking them.

            Assemble the Pie: Pour the strawberry-cream filling into the cooled crust, spreading it evenly. Cover and refrigerate for at least 4 hours or until set.

              Serve: Once the pie has set, slice and serve with fresh mint leaves for garnish, if desired.
