Strawberry Cheesecake Stuffed Cookies

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

For the Strawberry Cheesecake Filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, chopped

Prepare the Filling: In a medium bowl, beat the softened cream cheese with an electric mixer until fluffy. Add powdered sugar and vanilla extract, continuing to mix until smooth. Gently fold in the chopped strawberries. Chill the filling in the refrigerator for at least 30 minutes to firm up while you prepare the cookie dough.

    Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

      In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

        Assemble the Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop a tablespoon of cookie dough and flatten it in your palm. Place a teaspoon of the chilled strawberry cheesecake filling in the center and then wrap the dough around the filling, shaping it into a ball. Repeat this process until all dough and filling are used.

          Bake the Cookies: Place the stuffed cookie balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
