Ingredients

1 cup graham cracker crumbs

1/4 cup unsweetened shredded coconut

1/4 cup chopped walnuts (or pecans)

4 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and diced

1/2 cup heavy cream

Extra strawberries for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Make the Crunch Base: In a bowl, combine the graham cracker crumbs, shredded coconut, and chopped walnuts. Stir in the melted butter until the mixture resembles wet sand.

Press the Base: Line a mini muffin pan with paper liners. Press a tablespoon of the crunch mixture into the bottom of each liner to form a base. Bake in the preheated oven for 5-7 minutes, until slightly golden. Remove from the oven and let cool.

Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy and fluffy.

Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

Incorporate Strawberries: Gently fold in the diced fresh strawberries into the cheesecake mixture.

Assemble the Bites: Once the crunch bases have cooled, spoon the cheesecake filling over each base, smoothing it out to fill the liners completely.

Chill: Place the filled bites in the refrigerator for at least 2 hours to set.

Serve: When ready to serve, garnish with extra strawberries on top of each bite. Enjoy your delicious and refreshing Strawberry Cheesecake Crunch Bites!
