500g boneless chicken thighs, cut into bite-sized pieces

1/3 cup honey

1/4 cup soy sauce (low sodium)

2 tablespoons apple cider vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon crushed red pepper flakes (optional for spice)

2 tablespoons cornstarch

2 tablespoons water

2 green onions, finely chopped

Sesame seeds for garnish

Instructions
 

In a medium mixing bowl, whisk together the honey, soy sauce, apple cider vinegar, sesame oil, minced garlic, grated ginger, and crushed red pepper flakes until well combined.

    Place the chicken pieces in a large resealable bag or bowl and pour half of the honey mixture over the chicken. Seal the bag or cover the bowl, and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      After marinating, remove the chicken from the marinade and set aside the remaining marinade. In a large skillet or wok over medium-high heat, add a bit of oil and when hot, add the chicken pieces in a single layer (you may need to do this in batches).

        Cook the chicken for about 6-8 minutes, or until golden brown and cooked through, turning occasionally to ensure even cooking.

          While the chicken is cooking, take the reserved marinade and pour it into a small saucepan. In a separate small bowl, mix the cornstarch with water to create a slurry, then add it to the saucepan.

            Bring the marinade to a boil over medium heat, stirring continuously until it thickens into a glaze (about 2-3 minutes). Once thickened, remove it from the heat.

              Once the chicken is cooked, reduce the heat to low and pour the thickened marinade over the chicken in the pan. Toss to coat all the pieces well in the sticky sauce.

                Serve the sticky honey chicken over steamed rice or quinoa, garnished with chopped green onions and a sprinkle of sesame seeds.
