2 cups jasmine rice

1 lb chicken thighs, boneless and skinless

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 garlic cloves, minced

1-inch piece of ginger, grated

1 tablespoon cornstarch

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

1 cup chopped broccoli (steamed)

Salt and pepper to taste

Optional: Red pepper flakes for heat

Instructions
 

Prepare the Rice: Rinse jasmine rice under cold water until the water runs clear. Cook rice according to package instructions; typically, this involves using a 1:1.5 rice to water ratio and simmering for about 15 minutes.

    Create the Marinade: In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.

      Marinate the Chicken: Cut the chicken thighs into bite-sized pieces and place them in the bowl with marinade. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator for extra flavor.

        Make Sticky Sauce: Remove the chicken from the marinade (reserve the marinade) and sprinkle cornstarch over it. Toss to coat evenly. In a pan over medium heat, add a little oil, and then add the chicken. Cook for about 5-7 minutes until golden brown and cooked through.

          Add Sauce: Pour the reserved marinade over the chicken and allow it to simmer for another 3-5 minutes until it thickens and coats the chicken nicely.

            Prepare the Bowls: Serve the sticky chicken over a bed of fluffy jasmine rice. Top with steamed broccoli, and sprinkle with chopped green onions and sesame seeds. Add red pepper flakes if desired for a bit of spice.

              Plate and Enjoy: Divide the chicken rice mixture into bowls, serve hot, and enjoy!
