Sticky BBQ Pork Sliders

Ingredients
  

2 lbs pork shoulder, trimmed and cut into chunks

1 tablespoon olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

1 tablespoon brown sugar

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon black pepper

1 teaspoon salt

12 slider buns

Coleslaw (for topping)

Fresh cilantro (for garnish, optional)

Instructions
 

Prepare the Pork:

    - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the garlic and cook for an additional minute until fragrant.

      Brown the Pork:

        - In a slow cooker, add the pork shoulder chunks. Sprinkle the smoked paprika, cayenne pepper, black pepper, and salt over the pork. Pour the sautéed onion and garlic mixture on top.

          Make the Sauce:

            - In a separate bowl, mix together the BBQ sauce, apple cider vinegar, and brown sugar. Pour half of the mixture over the pork in the slow cooker, reserving the other half for serving.

              Cook:

                - Cover the slow cooker and set it to low for 8 hours or high for 4 hours, until the pork is tender and can be easily shredded with a fork.

                  Shred the Pork:

                    - Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the remaining sauce.

                      Assemble the Sliders:

                        - Toast the slider buns lightly. Place a generous scoop of the sticky BBQ pork onto the bottom half of each bun. Top with coleslaw and add the top bun.

                          Garnish and Serve:

                            - Optionally, sprinkle fresh cilantro on top for an added touch. Serve the sliders warm with extra BBQ sauce on the side.
