1/2 cup apricot jam

1/4 cup soy sauce

2 tablespoons apple cider vinegar

Marinate the Chicken: In a large bowl, combine apricot jam, soy sauce, apple cider vinegar, minced garlic, grated ginger, mustard, and sesame oil. Mix well. Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

    Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the chicken.

      Prepare the Baking Dish: Grease a large baking dish with cooking spray or a little oil to prevent sticking.

        Arrange the Chicken: Remove the marinated chicken from the refrigerator. Place the thighs in the prepared baking dish, skin side up, and pour the remaining marinade over the chicken. Scatter the chopped apricots around the chicken.

          Bake: Bake in the preheated oven for 30-40 minutes, or until chicken is cooked through and juices run clear (the internal temperature should reach 165°F or 74°C).
