8 oz. fettuccine or spaghetti

1 lb. sirloin steak, sliced into thin strips

3 tablespoons olive oil, divided

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sear the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak strips with salt and pepper. Once the oil is hot, add the steak in a single layer and sear for 2-3 minutes on each side until browned. Remove the steak from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and cherry tomatoes, cooking for about 2-3 minutes until the tomatoes start to soften.

        Add Spinach: Toss in the spinach leaves and stir until wilted, about 1-2 minutes.

          Create the Sauce: Lower the heat and pour in the heavy cream, stirring constantly. Gradually add the Parmesan cheese, allowing it to melt into the sauce. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

            Combine and Serve: Add the cooked pasta and seared steak back to the skillet, tossing them in the sauce until evenly coated. Adjust seasoning with additional salt, pepper, and red pepper flakes if desired.

              Garnish and Enjoy: Serve the Steak Pasta hot, garnished with fresh parsley and an additional sprinkle of Parmesan cheese.
