Ingredients

2 ribeye steaks (8 oz each)

Salt and black pepper to taste

2 tablespoons olive oil

4 cups frozen French fries (thick-cut preferred)

1/2 cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

Lemon zest (from 1 lemon)

Instructions

Prepare the Garlic Herb Butter: In a small bowl, combine softened butter, minced garlic, rosemary, thyme, parsley, and lemon zest. Mix until well combined. Place the mixture on a piece of parchment paper, shape it into a log, and refrigerate until firm, about 30 minutes.

Season the Steaks: Remove the steaks from the refrigerator, pat dry with paper towels, and season generously with salt and black pepper on both sides. Let them sit at room temperature for about 15-20 minutes before cooking.

Cook the Fries: Preheat your oven and bake the frozen French fries according to the package instructions until golden and crispy. For extra crunch, you can toss them in a bit of olive oil before baking.

Sear the Steaks: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. When the oil is shimmering, carefully add the steaks to the skillet. Cook for 4-5 minutes per side for medium-rare, adjusting the time depending on desired doneness. Use tongs to develop a good crust.

Rest the Steaks: Transfer the steaks to a cutting board and cover loosely with aluminum foil. Let them rest for about 5 minutes to allow the juices to redistribute.

Slice and Serve: While the steaks are resting, slice them against the grain. Plate the sliced steak alongside a generous serving of fries.

Top with Garlic Herb Butter: Slice the chilled garlic herb butter into rounds and place a few slices over the hot steak so that it melts beautifully.

Garnish and Enjoy: Optionally, sprinkle with additional herbs or a squeeze of fresh lemon juice before serving.
