Ingredients
  

1 lb flank steak, thinly sliced

2 large eggs

1 cup shredded cheddar cheese

1/2 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

10-12 egg roll wrappers

2 tablespoons soy sauce

1 tablespoon sesame oil

Oil for frying (vegetable or canola)

Instructions
 

Marinate the Steak: In a bowl, combine the thinly sliced flank steak with soy sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Allow it to marinate for at least 15 minutes.

    Cook the Steak: Heat a skillet over medium-high heat. Add the marinated steak and cook for 4-5 minutes, or until browned and cooked through. Remove from heat and let it cool slightly.

      Prepare the Egg Filling: In a separate bowl, beat the eggs and season with salt and pepper. Scramble the eggs in the same skillet over medium heat until fully cooked. Remove from heat and mix in the shredded cheddar cheese and chopped green onions.

        Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you. Place 2-3 tablespoons of the steak, followed by a couple of tablespoons of the egg and cheese mixture. Moisten the edges of the wrapper with a little water. Fold the bottom corner over the filling, then fold the sides in and roll it up tightly. Repeat with remaining wrappers.

          Fry the Egg Rolls: Heat oil in a deep pan or fryer to 350°F (175°C). Carefully add the egg rolls in batches, frying them until golden brown and crispy, about 3-4 minutes on each side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            Serve: Allow the egg rolls to cool slightly before serving. Cut them diagonally for better presentation and serve with your favorite dipping sauce, such as teriyaki or sweet chili sauce.
